Kandungan Boraks Pada Kerupuk Yang Dijual Di Pasar Kecamatan Jenangan Pada Tahun 2023

Abstract

Borax is a banned additive according to the Regulation of the Minister of Health of the Republic of Indonesia No. 033 of 2012 because the negative effects of borax on human health cause disorders of the central nervous system, kidney and liver function, and death. The purpose of this study was to determine the borax content in crackers sold in Market X, Jenangan Subdistrict in 2023. This research method is an organoleptic test and borax qualitative test (rapid test) with a descriptive research type. The object of this research is cracker products sold in Market X Jenangan Subdistrict using the Total Sampling Technique method based on the number of crackers sold by 3 sellers in Market X Jenangan Subdistrict with a total sample of 21 crackers. The results were obtained, from 21 samples of crackers examined by the organoleptic test method, in the texture category, 3 samples had a slightly dull color, and in the color category, 7 samples were difficult to crush. In the borax qualitative test method, 14.3% of the samples still used borax in the crackers. The use of borax is still found in crackers with the characteristics of difficult-to-crush texture and dull color. It is suggested that the public should better understand the characteristics of crackers containing borax to protect their health.
